Few more points concerning my recent GB experience after a few more runs.
GB is currently easier than before for a well geared group because bosses have lost alot of their initial HPs. I was surprised how fast they fall (and you can ignore alot of the "new" mechanics by shear brute force), therefore the speedrun is even faster than before.
The issue is running GB as a low geared (~ruin gear) group, which is the initial intended audience. On Masta Mixa, which is currently for me the key problematic boss, a ruin gear character will get killed by staves, fists (even while stacked to share the damage, plus the fact that a low geared healer duo won't be able to outheal this kind of damage), add waves.
Even with an experimented tank, you just have one guard and cooldown on challenge, you can only save one person during a staves + add waves and with multiple low geared people in group, it always end up with at least one death. On my run with a fully low geared group (except my tank), we wiped it 3 times (I could probably finish the fight on myself if there wasnt additionally a timed death touch if staves are not killed within a minute or so) before we managed to finish it with 3 people remaining through sheer luck. So, while this fight does not pose a threat to a speedrunning team (even did it as a 5 man team with a solo heal earlier this week), the gear gap hits way too hard in this case.
Concerning the waterfall boss, it can indeed outregen a low geared group, even while cleansing their debuffs, as long as they do not understand the need to offtank the nurglings away from it (as in the old/pre ability patch strat) to prevent regen.
All in all, new GB is pretty fun as long as people learn the new mechanics, it only needs a few adjustments on the aforementioned boss to make it more in line with a dungeon intended for ruin/annihilator geared people.

The only concern I would have is the staff because I don't know how much damage it does atm. If it does serious damage then maybe it should be toned down.
The hands had to be kited on release until the first (of many) rework. Stacking during a boss fight is not a fun mechanic.

I've played all the versions of Gunbad and most of the mechanics are new ones.
For example, the armored squig in left wing never had the mushroom mechanics, and instead had wormlings adds spawning if not interrupted. Same for final boss in left wing, who had to be kited around the room with huge punt arrows + puddles... Not saying the new mechanics are bad but calling it restoring old mechanics sounds a little strange.
Concerning Masta Mixa, the fists did indeed have to be kited until they became impossible to kite (too fast and almost always hiting the kiter).
