Regarding the issue that no script call to set the settings is working, here a workaround:
instead of /script UI6settings[ondmged] = false type /script UI6.updateSetting("ondmged", false)
in your chat windows

Ok so I found it out by myself.

Disabling all player/target related bars can be done using these commands:

/script UI6.updateSetting("playerHUD", false)
/script UI6.updateSetting("targetHUD", false)

Feature Request:
Settings should be character based and not global. For example, /script UI6.updateSetting("playerHUD", false) currently disables the hud for all characters and not for the one you are currently logged in to.

Is there a way to keep my unit frames from enemy? I tried just dragging in my old enemy folder into addins but it messed everything up.

use your saved settings from the previous version. cant remember where that gets stored sorry. haven't touched the game in a while.

I don't play much anymore, so I'm not sure I'll likely implement that. It is a good idea though and I should've done that and had some versioning control.
