It depends what you prefer to play... Here are the big lines in my mind.
To be fully offensive go conquest and focus on damage with strenght and crit or weapon skill. Here you totally don't care of being tankish and/but you'll pay the price of it : squishy, dead without healer taking care of your ass but when the situation is favorable to you it's party time and damned fun to play. Try to combine armor sets boosts to maximize strenght in this config, best with 2h, clearly possible with 1h and shield but slot offensives talismans then. In this config all your rr points are going in offensive bonus. Dont forget the heal debuff of glory path..
---> A lot of fun here but not a good choice for new player because you'll pay each mistake by quick death.
---> Better in sc, in open rvr you wont last long without healer or more defensive stuff to balance your stats. You'll mostly do hunt/guerrilla attacks than real front line tanking because you just couldnt.
--> Sometimes useless , indeed here it's clearly a Rock–paper–scissors build and if you dont have a minimum amount of defensive items or a shield to switch depending context good luck to fight strong destros.
To be more balanced you can keep conquest path but then wear defensive set and jewels. I find conquest and glory interesting to play.There you can put your rr points in others directions like wounds and defensive skills.
With time you'll probably earn at one moment or the other a purple bag that will contains subjugator weapons or shield, that's why i would say to focus on buying defensive sword with the sc tokens, and always have a shield in your bag and a second line of tactics to be more strong if needed.
Always a shield in bagpack, it saves lives ! :p

I really kinda enjoy this one for 2h defensive with low renown, bad gear, same as Xergon's build with different tactic.
RoR.builders - Knight of the Blazing Sun
All 40 renown in parry and dodge/disrupt.
With BL + ruin + WI jewels, using toughness, resist and Stay Focus aura, you can get good 750 toughness, 750 wounds, 55%+ parry with Dawn weapon and over capped resist.
It really lets you hold your own in most scen, small scale. And when you go RvR, just strap a shield+ 1h with wounds talis, change RF for another tactic and spam HTL. Good general build for starting knight like me. Fairly straight forward to play.
Edit : thinking about it... even in **** gear low renown... it does nearly as good as BiS RR80 IB as 2h. You just trade damage for survivability and better CC.

worst or best thing? is that all builds offensive 2h, deffensive 2h, offensive snb and defensive snb are in same moment good and bad thats why pick one is hardest choice on knight in my opinion
