For tanks? Sword Master and Black Orc are good at doing dps and do their job well as tanks, their weaknesses mainly shows in 6vs6 where they lack some tools to set up for kills, but they're great for melee brawls.

Starting careers I would recommend Chosen, Knight of the Blazing Sun as tanks, simple and you can focus on learning positioning.

I would recommend trying out several classes and see which one appeals to you the most. You're much more likely to stick with the game if you play a class you enjoy, rather than one you feel you need to because it's 'meta'.

When you said you're open to dps, are you talking melee dps or ranged dps?

Honestly don’t just play whatever you want unless you want to suffer greatly. Getting stomped in SCs because there are no healers is a real thing and will slow you down and frustrate you to no end.

Whichever side you pick play a healer to get started. Getting to lvl 40 with a reasonable gear set up and Renown Rank doesn’t take that long. Use that healer to get your foot in the door with a good guild. Tank is also a fine choice especially if you actually do your job. Then use that good guild who will balance around you to experiment and play what you want.

This game is filled with players who have tons of experience and will respect you and train you and help you out if you play a good healer or a good tank.

Try a DoK or WP for a fresh and interesting take on heals.

It is the way.

Black Guard I'd say has the highest skill floor out of the tank classes and you only really want to play him 2h outside pve, but when you finally get it you bring a serious amount of damage and utility balanced around a resource called hate, which makes your utilities be more effective among other things.

Chosen is largely about prep and picking the right tool for the job spec/aura wise beforehand and can be a bit clunky to change on the fly, but that can free you up to learn the fundamentals and all.

Black Orc i personally dislike the class mechanic, where you have three states and what you can use depends on which you are in. That said it's the tank most likely to flat out statcheck things and I'd personally say that it is arguably the simplest of the lot to do well with.

As for the Order tanks there are differences, but if one of these appeals to you the Order one is not gonna be fundamentally different on mechanical level. Outside of Swordmasters you are more likely to see Destruction tanks to opt for dps builds, when they get the gear for it.

The best advice I can give you is to take each and every class up to 16 and pick up class mechanic that suits you best - rest is a question of gear and build. That being said let's brake down each class:

TANKS:
KOTBS/Chosen: rvr frontline tank with aura mechanic. Basically you just stand there and magic happens. Can be specced into panzer beast or 2h support, does good in 1vs1, great in 6vs6 and wb+
Boring mechanic IMO. Difficulty level (0-10): 3

BO/SM: go to dps tank with 1-2-3 (combo) mechanic. Great 2h build, great group support on BO and dps (WL) support on SM. Does great in duels and rvr. BOs are killer beasts looks and fight wise :)
Mechanic takes some getting used to. Difficulty level (0-10): 5

BG/IB: caster killer, front line dps tank, hate/grudge (build up) mechanic. Squishier than other tanks but outstanding buff machine, unkillable if specced and played right. Can kill anything. You will have to use 4 action bars and have proficiency in piano playing since you'll be using at least 20 skills all the time. Offensive snb, defensive snb AND 2h, great 2h burst.
Build up is good but true mechanic is handling 20+ skills at the right time. Difficulty level (0-10): 8

MDPS:
Slayer/Choppa: aoe mayhem with additional utility (slayer) or survivability (choppa), build up mechanic. Requires group support to shine, rage mechanic will make you put Leeroy Jenkins to shame ;) Looks awesome, 16 skills to use.
Build up mechanic. Difficulty level (0-10): 5

WH/WE: single target rogue class. Great fun when running solo, tends to be overlooked in warbands because you'd have to build whole wb around them. Cool factor +50, utility -45. Caster killer for the hardcore.
Stealth mechanic. Difficulty level (0-10): 7

WL: a class on it's own. Source of salt since launch of live servers to this day. If played right can kill anything in under 6 seconds.
Pet mechanic. Difficulty level (0-10): not even gonna...

Mara: Debuff master with a history of love/hate from devs. Either ridiculously OP or embarrassingly weak, depending on how nerf hammer swings. Currently in good place for monstro build. 18 usefull skills which require stance dancing to be used to full potential. Looks cool :)
Stance dance mechanic (seriously dance, staying in 1 stance will lower your dps output). Tankiest of all mdps, underdog of mdps race. Difficulty level (0-10): 7

RDPS:
Magus/Engie: AOE condition masters, great single target spec, great close range utility, all three trees are viable. Can be built into CQ tank, mid-to-long range aoe artillery or long range sniper. Turret/demon mechanic means you'd have to micromanage it to get the most out of class (means also that you have to know your positioning and timing).
Turret (pet dance) mechanic. Difficulty level (0-10): 5 (7 if you take positioning and timing into account)

Sorc/BW: burst rdps class, best dps potential, great aoe and single target, requires group support to shine (much like slayer/choppa). Shiny skill animations mean you won't be able to hide on a battlefield.
Backlash/crit mechanic. Difficulty level (0-10): 5

SH/SW: archers of RoR. Support rdps / roamer / frontline mdps. SHs are second best kiting class and tons of fun to play, excellent debuffers and utility class (gobbo master race), SWs are... elves. Arguably the worst RoR class SWs need some serious stance dancing to get real burst going and skill required to play both archers is up there with BG/IB. 20+ skills to use, 3 stances to utilize, 3 viable paths (SHs mdps path is white lion, SW mdps path is close to assassin from GW2). How the class performs is highly dependant on what gear you use (most gear dependant class out there). Both are the best support (utility) rdps in the game.
Stance dance (pet dance) mechanic. Difficulty level (0-10): 6 (8 before rework)

HEALERS:
DOK/WP: best group healer, good ST, melee healing nerfed to the ground but the old feel can be somewhat restored with warlord gear. So if you want to mdps heal... Don't ;)
Resource management mechanic. Difficulty level (0-10): 5

Zeal/RP: best ST healer. Decent dps option thanks to int/wp switch mechanic. Pure healer with a pretence to be hybrid.
Int/WP switch mechanic. Difficulty level (0-10): 3

Shaman/AM: used to be the best hybrid healer in all the MMOs. With their mechanic nerfed in RoR few years back both remain viable dps and great offensive healer. Shaman is the best kite class in the game (with debuffs, buffs and cool factor to go along with it), both SHMs and AMs however are great at utility and support. Shammie is a little bit better with healing, AM with dpsing.
Yin/Yang mechanic. Difficulty level (0-10): 6. But if you take it up to 9 you can kite and tank warbands.
RoR: Burszui SH, Ropopuch SHM<|[]|>Ginnar IB, Vidarr HMR, Runatyr RP ++ REV guild ++
Live: Karak Izor -> Karak Norn - Yarpaen IB, Ginnarr SL, Volundr ENG +Ithilmar's Chosen+
