I'm leveling now and I read the chat but I don't know how to use it. What if I want to go to the help channel? What if I would like to join some language in particular channel? And so on.

You use particular channel by putting "/command" before typing, example:
/advice - advice channel
/p - party channel
/a - alliance channel
/1 - region channel
/2 - region rvr
/4 - trade channel
/5 - LFG channel

And so on.
