I love how this UI looks and want it so bad.

Since it's in the beta...it must exist in the assets?

prob not, if it was default UI then they changed/upgraded it to the current default without keeping the old one (redundant files in client - more to dl)

Unless there is a mod which emulates the old look you wont get it

Do you know of any simple type of addons by chance?

pure, enemy/squared, phantom, xhud, nRarity, CaVES, Cmap, GEs , REs, Queue Queuer, Tidy chat, Tidy roll and so on and on. My idea of simple may deviate from your so I would recommend for you to try out them yourself and judge on your own.
