In the example provided you can clearly see that the enemy attacked (oathstone did damage), he maybe stopped attacking as soon as he realized who the unstoppable force he was facing was, which sometimes causes enemies to be paralyzed by fear. When I face multiple enemies I run too, but not out of fear, of course, I do it strategically, and sometimes this allows me to overpower my enemies solo.
You can search through the thousands of solo kills if you find it fun, it's just a game after all.
