Depends on what you want to do, Chosen are great, they are fairly easy to play, look amazing as they level and are almost always needed in a group set up. They don't have the pure burst of other destro DPS tanks if you want to do damage, but they do have a very useful 2h tree that.
Squig herders have a harder learning curve, but if you can master stance dancing, kiting, and strafing, it is a hilariously fun class, great solo class as well. I am not 100% sure how SH are endgame once everyone is in best-in-slot.
