a shaman heals more over time (hots) has a bigger absorb shield and can steal ap atm so he can cast the grp heal often
the zealot is the burst healer which heals much with his insta heal, big hots and big castheal (so the better single target healer) and he can switch fast between heal and dmg with his career skill

Zealot/RP are better slightly better healers thanks to instant cast heal, and are much easier to play effectively because their non heal contribution is mostly passive from various buffs. Their class mechanic actually makes it pretty risky to DPS at any point because of the lengthy cooldown to be able to go back to healing, was never a fan of it.
AM/Shaman are built around doing both healing and damage, although you will be speccing into only one. The thing about these classes is their non healing contribution to the team is much more active than the other healing classes. To be effective you must properly place the snare pools, AP and debuff the correct targets, and use your class mechanic to get off 1 good heal or damaging spell depending on your spec. Much harder to play, but in my opinion much more fun and rewarding when played at the highest skill level.

So if you are in healing mode and switch to DPS you can immediately go back to healing?
